Mexican Green Beans

An easy and delicious green bean recipe made with fresh beans, cotija cheese and your favorite hot chili oil. This recipe can easily be doubled to feed a crowd. Delicious side hot or room temperature.

Ingredients

  • 1 12-oz bag fresh green beans, trimmed
  • olive oil to coat the pan
  • about 1-2 Tablespoons water to steam the veggies
  • pinch of kosher salt prefer Diamond brand
  • fresh ground black pepper
  • juice of half a lemon
  • 1 Tablespoon chili oil (mild, medium or hot) according to your heat preference
  • Cotija cheese substitute with feta cheese

Instructions

  1. Coat the pan with a little olive oil and add about a Tablespoon or two of water - just enough to create a little steam for the vegetables. Add the green beans, cover and cook over medium heat for a few minutes.

  2. Uncover and allow the water to finish evaporating. Sprinkle with a pinch of kosher salt and pepper. Add the lemon juice and chili oil. Toss so everything is coated.

  3. Remove from heat and transfer to a serving plate. Sprinkle cotija (or feta) cheese and serve hot or at room temperature. Salud!
