Ingredients

  • 2 28-oz cans Bush's Baked Beans, original recipe
  • 8 strips bacon, prefer Oscar Mayer Center Cut
  • 1 medium yellow onion or ½ large onion, diced
  • ¾ cup ketchup
  • cup molasses
  • cup brown sugar, packed
  • tablespoons dry mustard

Instructions

  1. In a wide skillet, over medium heat, cook the bacon strips until crispy and the fat has rendered. About 8-10 minutes. Remove the bacon and drain on a paper towel. Add the diced onions to the bacon fat and cook until translucent.

Note: Depending on the bacon you use, you may need to discard some bacon fat. You'll need about 4-5 Tablespoons of bacon fat for the recipe.

  2. In a heavy duty stock pot or Dutch oven, add the beans and bring to a simmer. Add the cooked onions, bacon fat, ketchup, molasses, brown sugar and dry mustard. Mix well to combine and cook for 30 minutes, stirring occasionally.

  3. Layer the bacon slices on top, reduce heat to low and cook an additional 5-10 minutes.

Remove from heat and allow to rest 10-15 minutes before serving.

Option: Bake at 350°F oven for 30 minutes.
