While my hand is always raised for all the tacos, nachos and favorite Mexican bites, this year I wanted a formal sit down family meal for cinco de mayo. Inspired by the colors of a napkin, I styled my Succulent Cinco de Mayo Tablescape. This a succulent tablescape is worthy of an equally succulent menu! Corny, but I couldn’t help myself.
This menu was the perfect family-style sit-down meal. The recipes are easy to make and if your family has a good appetite, you won’t worry about leftovers.

Pork Carnitas – slow roasted pork shoulder in citrus juices and spices, then crisped up in a cast iron skillet. Truly a perfect, delectable bite. Try them in tacos, burritos or quesadillas. They also make an amazing loaded nachos!
Cilantro-Lime Rice – a Chipotle copycat recipe that’s fuffy and delicious. A perfect side to the carnitas.
Mexican Green Beans – a simple stove top side dish with the right amount of heat and topped with all the creamy cotija cheese. I love these at any time. I often make them for lunch with a chicken cutlet.
Pico de Gallo – my go to recipe that’s perfect and so fresh every time! You must try this recipe!
Carlota de Limon – Mexico’s version of a Charlotte Russe in a no-bake lime ice-box cake. Delicious , refreshing and a perfect ending to such a savory meal.
Not pictured: Palomas – I’m a big fan of this drink. I find it very refreshing and I prefer it over a Margarita. I had a pitcher in the kitchen that never made it to the table.
