These are the green beans of your spicy dreams! Boy, are these delicious with just the right amount of crunch, spice and creaminess from the cheese. These are so simple to make, it’s more of a method than a recipe. You can easily make these in a few minutes. They are delicious hot or at room temperature – making them a great buffet menu item.

a bag of fresh green beans, trimmed
olive oil to coat the skillet
Mexican hot chili in oil (my family only does mild spice, but go bold if you can)
juice of half a lemon
kosher salt and fresh pepper to taste
cotija cheese (or substitute with feta cheese)
HERE HOW I MADE THEM
Coat the skillet with a little olive oil and add little water – about a tablespoon or two. Add the green beans, cover and cook on medium to high heat for a few minutes just to steam and soften them up. Uncover and once the water has evaporated, sprinkle with kosher salt and black pepper, squeeze the lemon and add about a tablespoon of Mexican chili with some of the oil. Toss to coat the green beans. Serve immediately and garnish with cotija (feta) cheese. How easy is that?
Note: If your family doesn’t like the chili oil, like mine, sparingly drizzle the chili oil over the green beans and serve extra on the side for the spice lovers.

Mexican Green Beans
An easy and delicious green bean recipe made with fresh beans, cotija cheese and your favorite hot chili oil. This recipe can easily be doubled to feed a crowd. Delicious side hot or room temperature.
Ingredients
- 1 12-oz bag fresh green beans, trimmed
- olive oil to coat the pan
- about 1-2 Tablespoons water to steam the veggies
- pinch of kosher salt prefer Diamond brand
- fresh ground black pepper
- juice of half a lemon
- 1 Tablespoon chili oil (mild, medium or hot) according to your heat preference
- Cotija cheese substitute with feta cheese
Instructions

Coat the pan with a little olive oil and add about a Tablespoon or two of water – just enough to create a little steam for the vegetables. Add the green beans, cover and cook over medium heat for a few minutes.

Uncover and allow the water to finish evaporating. Sprinkle with a pinch of kosher salt and pepper. Add the lemon juice and chili oil. Toss so everything is coated.

Remove from heat and transfer to a serving plate. Sprinkle cotija (or feta) cheese and serve hot or at room temperature. Salud!
