All I can say is everything is better with butter! This is the creation of Danielle Kartes from Rustic Joyful Food and it is the best coconut macaroon I’ve eaten. This recipe exploded on social media and it’s an award winning recipe. Make it and you’ll find out why! It’s delicious! When you make it, make a double batch.
Dump all the ingredients in the mixer and mix them together. Because there’s melted butter in the recipe, I didn’t want my cookies to spread out so much so I refrigerated them a little over 30 minutes to allow the butter to set a bit. This step isn’t in her original recipe.
I used a 2 inch scoop and I got 20 cookies. I baked mine for about 12 minutes until they were golden with crispy brown edges. Allow them to cool and set on the cookie sheet for 5 minutes, then transfer to the serving dish. I served them on a wire rack, so they continued to cool as if they were on a baking rack.
The bottom of the cookie was a perfect golden color. I was so pleased with the outcome and all the coconut lovers in my family just ate them up! I hope you enjoy them too. Remember recipes are to be shared and the love you bake into them is the secret ingredient! Happy Christmas baking!
Coconut Custard Macaroons
This is the most creamy, melt-in-your-mouth coconut macaroon you'll ever eat! So delicious!
Ingredients
- 1 14-ounce package sweetened shredded coconut
- 1 large egg, room temperature
- 1 stick unsalted butter, melted
- ¾ teaspoon kosher salt
- 1 14-ounce can of sweetened condensed milk
Instructions

Pre-heat oven to 375°F and set rack in the center. Line a cookie sheet with parchment paper.

In a mixing bowl, with either an electric mixer or wooden spoon, mix all the ingredients until the batter is completely mixed.

Refrigerate the batter for at least 30 minutes.
Note: I added this step so the macaroons wouldn't spread out so much during baking.

Use a 2-inch ice cream scoop to scoop out even cookies onto the prepared cookie sheet. Bake at 375°F for 10-12 minutes or until the macaroon is golden brown with crispy edges. Depending on the weather and your oven, you may need additional baking time.

Remove from the oven and allow to cool on the cookie sheet for five minutes before transferring onto a serving dish. Allow the cookie to cool completely prior to eating as the center will be very hot.
