I love roasting vegetables and these Brussels sprouts are over the top delicious. The perfect side to any main course.
Start by dicing about 5 slices of bacon and cooking them over medium to high heat. Once they have crisped up, transfer them to a paper towel and drain excess fat.
Clean and trim two small bags of fresh Brussels sprouts and cut them in half. Add them to a baking sheet and sprinkle Kosher salt and black pepper to taste and coat in olive oil. Place them in a 400°F preheated oven and roast them in the center rack for 35 minutes. Remove from the oven, add the bacon, drizzle with store bought balsamic glaze reduction and toss to evenly coat. Return to the oven and roast an additional 5-7 minutes.
Remove from the oven and plate. Finish with a little Kosher salt, fresh ground black pepper and drizzle again with balsamic glaze.
Roasted Brussels Sprouts with Bacon and Balsamic Glaze
Delicious crispy and roasted Brussels sprouts with the sweet balsamic glaze and salty bite of the bacon. A perfect side dish for any meal.
Ingredients
- 1½ – 2 lbs. Brussels sprouts – clean, trimmed and cut in half
- 5 strips bacon, diced
- olive oil
- Kosher salt
- fresh ground black pepper
- Balsamic glaze (store bought)

Preheat oven to 400°F.

In a wide skillet over medium to high heat, cook the bacon until crispy. Transfer to a paper towel to drain.

Place the trimmed Brussels sprouts on a baking sheet and sprinkle with Kosher salt, black pepper and olive oil. Toss and coat evenly. Bake in the center rack for 35 minutes.

Remove from oven and add bacon and drizzle with balsamic glaze. Toss to coat evenly and return to the oven for 5-7 minutes.
