If you’re looking for something other than the Sunday chicken dinner (not than chicken isn’t delicious), then Cornish Game Hens is a wonderful alternate. These hens are brined for a few hours to lock in moisture, infused with flavor and roasted to perfection. Nestled over a bed wild rice pilaf on a long serving platter makes an impressive presentation. The haricots verts is a delicious and bright side. You can make most of this menu ahead of time and just roast the game hens the day of your party. Open a few bottles of wine, serve some dinner rolls and end the evening on a sweet note with my Classic Pumpkin Roll.

I love how moist and juicy this Cornish game hens were. The wild rice worked perfectly with the hens and it’s a very versatile rice dish. This is a wonderful and simple menu even a non-cook can execute with ease.
