Valentine’s Day is a special day to let someone special know how much you love them! Honestly, you should tell anyone that’s special just how special they are and how much they mean to you. You never know what someone is going through and when they might need to hear a kind word.
This Valentine’s day fell on a Sunday and we have a long standing tradition to eat as a family every Sunday because weekdays are hard. Gathering everyone during the week is like herding cats. I mean, really! Everyone has a lot going on and between work schedules, commutes and life it seems we eat in shifts. So this Valentine’s Day dinner was for the family.

Engagement Chicken – a crispy and perfectly lemon-pepper roasted chicken
Creamy Mashed Potato – buttery, rich and creamy with butter pools
Balsamic Glazed Carrots – this is just candy, tender organic carrots glazed with butter, brown sugar and balsamic glaze

This wasn’t anything fancy or romantic with candles, it was a simple table setting in our eat-in-kitchen for the family. I wanted to serve comfort food and what’s more comforting than a roasted chicken with mashed potatoes, carrots and strawberry cake? The roasted chicken is Glamour Magazine’s famous “Engagement Chicken” recipe – it truly is a delicious roasted chicken, so lemony and crisp. I don’t recommend making a gravy out of the drippings though.
The blush table runner is from Hearth & Hand along with the napkins. Dinner plates are from Pier 1 Imports, discontinued and the serving platters are all from HomeGoods. Italian wine glasses are from Marshall’s many years ago and the silverware is our daily set.
I purchased these beautiful blush roses from the grocery store and placed them in a white ceramic pitcher at the end of the table next to the cake.
The food was amazing and the company even better. We spent a quiet Sunday dinner, just the family around the dining room table, sharing a meal that was made with love for loved ones. It doesn’t get better than that.
